Smoked baby back ribs barbecue?
So I have a new vertical propane smoker for Christmas. I tried ribs Babyback thinking can be too cold today, about 200? Smoked for three hours, then wrapped in paper of two hours, one hour in smoke. I took them out and they were difficult. If I put it back in one hour each time the temperature raised to about 125 or more. littlle were better but still not as tender as I raised in my last cigarette gas grill. Everybody knows what's gone wrong? Do I have to from time to time? Thank you. I gave them 250 in a few hours and was very good. Only werent done. Thank you all.
Do you have a separate thermometer or you can count on the smokers? Get a separate digital thermometer that will give more accurate readings. 225 is a good temperature. Try ribs brine last night. Remember Rule No. 1 in the barbecue. Low and slow. You must be patient food. And never, never boiling.
