Stay away from green wood to start
You still have to use dry wood to start to get good results. The old boys who have been for years the possibility Q'ing to use a mixture of dry wood and green wood, but beginners are wise to stay away from this until they get a good idea to control the temperature and fire.
Green wood is a surefire way for a beginner to a barbecue smoking ruin food. What happens is that the flesh becomes bitter and can not be saved.
Do not change too much at once
