Chicken Barbecue Fire Caribbean
Preparation time: 15 minutes
Marinating time: 2 hours in the refrigerator, or overnight if possible
Cooking time: 30 minutes
Makes 6 servings
Ingredients
6 pieces of chicken
3 small chilies hot (as the crow flies, Scotch Bonnet), remove the seeds for a milder strength
3 pieces of fresh ginger root, about 1 inch (25 mm) each cube
6 spring onions, trimmed
2-3 cloves garlic
1 / 2 teaspoon allspice
1 teaspoon paprika January
1 teaspoon dried thyme
pinch ground cinnamon
Pinch cloves
5 tablespoons light soy sauce
6 tablespoons white wine vinegar
freshly ground black pepper ground
1. Place the onion, peppers, garlic, ginger, thyme, paprika, pepper, cinnamon, cloves, wine vinegar, soy sauce and pepper in a food processor and food make a soft dough.
2. Place chicken on a plate and pour it on. Turn the parties so that they are well coated. Transfer to refrigerator and marinate at least 2 hours, the night if possible.
3. Remove the chicken from the source, keeping the marinade for basting and grill over hot coals for 30 minutes. Turn occasionally and sprinkle with remaining marinade.
4. Serve immediately in individual plates.
Tip: To cook a whole roast chicken
For whole poultry and other foods that take longer to cook, consider a heat-resistant digital thermometer. They have a unit base located on the counter and a heat resistant cable that connects the temperature sensor to the base unit.
The probe is maintained in food during cooking and base unit displays the temperature in the cooking time. Slide the tube into the chest like a whole chicken.
Connect the cable to the base unit. Turn the base unit and follow manufacturer's instructions to set the desired final temperature. Once the outlet temperature is reached, remove the chicken from the heat.
Use a meat thermometer for your grill meat is strongly recommended for better and more hygienic.

Is rust bad for you BBQ?
I have a barbecue with a little rust (in fact, oxidized) metal bars to hold / plate grill and charcoal just below the rusty metal bars. I fear that the coal is heated in the rust the metal bars and pollutant product. Should remove the metal bars and put new or just do not worry about it and continue to use it as is. Grill / grids / Plaques themselves are not oxidized all, are the bars that support between the grid and charcoal that are rusty.
