Spare Ribs Thai sweet and sour sauce
Ingredients
ribs * 4 pounds (2 kg) of pork
* 1 red onion, minced
* 2 cloves garlic, minced
* 1 tablespoon grated fresh ginger
* 1 tablespoon oil Peanut
* 1 / 2 cup (125 ml) pineapple juice
* 2 tablespoons fish sauce
* 1 / 4 cup (60 mL) batter tomato
* 1 / 4 cup (60 ml) fresh lime juice
* 2 tablespoons honey
* 1 / 3 cup (90 ml) Thai sweet chili sauce
Method
* Separate ribs by cutting between the bones with a large knife or hatchet. Simmer ribs in a large saucepan separate salt water until tender, about 30 minutes.
* Drainage. Rinse under cold water and drain again. Let cool completely. Place onion, garlic, ginger and oil in a small saucepan. Fry over medium heat until tender, 5-10 minutes.
* Add the pineapple juice, fish sauce, tomato paste, lemon juice, honey and 2 tablespoons sweet chili sauce. Bring to a boil. Simmer gently until thickened, 10 minutes.
* Allow to cool completely. Brush the mixture over the sweet and sour ribs. Grill as directed below, basting with remaining hot sauce everywhere. Serve hot.
Outdoor BBQ
* Grill over medium-hot coals, turning frequently and sauces, until golden and crisp, 15 minutes.
Inside
* Preheat the grill. Grill, striking under the grill to baste every 5 minutes, until golden and crisp, 15 minutes.
Think ahead
* Pre-cook the ribs until one day in advance. Cool completely. Cover with plastic wrap and refrigerate. Make glaze up to 1 day before. Cover and refrigerate.
Cooks note
* Pre-cook ribs in boiling water to remove the outer layer of fat. This not only prevents outbreaks during cooking, but allows the rib meat to stay inside tender, juicy and crisp outside.
Hoisin Ribs ribs flavored variation
* Remove all ingredients in mixing bittersweet. Once Mix 1 / 2 cup (120 ml) hoisin sauce, 1 / 2 teaspoon Chinese five spices, 4 cloves crushed garlic, 2 tablespoons of root gratred fresh ginger, 2 tablespoons sherry demi-sec, 1 / 4 cup (60 ml) soy sauce, 2 tablespoons Chinese hot sauce, and 1 / 2 cup (120 ml) brown sugar. Reserve 2 tablespoons mixture of meat marinade hoisin. Brush remaining mixture over ribs. Grill according to the recipe above.
