Grill, London Wide Jam smoked chilli and Mediterranean Salad

For the chilli jam Width:
1 / 2 pounds dried chiles Width
1 / 4 cup honey
1 / 4 cup currant jelly
1 tablespoon white wine vinegar
4 cloves garlic
1 shallot, quartered
2 London Broil steak, about 1-1/2 pounds each
mesquite chips, soaked in water for at least 30 minutes
For Mediterranean Salad:
4 tomatoes into large cubes
1 onion, diced
24 Kalamata olives, pitted
The juice of 2 lemons
2 tablespoons virgin olive oil
Salt
Freshly ground
To make jam: Halve the peppers, remove seeds and discard. Place in a medium glass bowl, pour enough boiling water to cover the peppers. Cover with a plate and let the dish chiles steep for 30 minutes to reconstitute. Drain the peppers and let cool completely in refrigerator. Combine peppers and marinade ingredients in a food processor. Puree until smooth. Expenses until ready to serve (can be made jam up to 3 days in advance).
Rub the filets with jam, place them in a plastic bag, and marinate for one hour at temperature.
Meanwhile, prepare salad: Combine tomatoes, onion, olives, lemon juice and oil. Season salt and pepper to taste. Toss and refrigerate.
Follow the instructions on the grid for the use of wood chips for smoking. Place fillets in center of cooking grate and grill from August to October medium-rare or until desired doneness, turning once half cooking time. Let steaks rest for 5 minutes before serving. Thinly slice diagonally against the current. Warm salad on the side serve.
Makes 6-8 servings.
Tips for meat:
* Meat should be black – which means it crashed and mature.
* A thick layer of fat added flavor and prevents the joint from drying out during cooking.
* The meat should be made of marble. Marbling is little ribbons of fat running through the meat. Again this adds flavor and prevents it from drying out during cooking.
