What to do with leftover meatloaf?
I made meatloaf BBQ two days ago and I have lots of leftovers. I did meat cake sandwiches, but there were other things I can do with it? Help! I need some ideas?
This recipe actually uses the meatloaf too. How awesome is that? *** *** Meatloaf Baked Ziti ziti books • 1 • Salt and black pepper • 2 tablespoons freshly ground tablespoons of olive oil (EVOO) • 1 small onion, finely chopped • 3 cloves garlic, minced • 1 c. tsp red pepper flakes • 1 cup of meat juice (eyeball) • 1 can of tomato style thick (14 oz) • 1 can of crushed tomatoes (28 oz) • 4 slices 1-inch thick (or equivalent) cake leftovers • 1 cup ricotta cheese • 1 cup Parmigiano Reggiano cheese, divided • 1 ball of fresh mozzarella cheese, cut into small cubes Preheat oven to 375 degrees F. divided Bring a large pot of water to a boil over high heat. When the water begins to boil, add a handful of coarse salt. Cook the pasta just before they are al dente. Drain and return to saucepan. Preheat a skillet over medium heat. Add EVOO, onions, garlic flakes and red pepper. Cook, stirring frequently, for about 5 minutes. Add beef broth and two cans of crushed tomatoes and bring to a bubble. Cut bread meat or crumble and add remaining sauce. Simmer for 3-4 minutes. Add salt and pepper to taste. Add half the tomato sauce for pasta meatloaf cooked. Add the ricotta and half the Parmesan and toss to coat. Add half the diced mozzarella cheese, gives quite a stir and then transfer an oven safe cooking. Cover with remaining tomato sauce, meat loaf, dice the mozzarella and Parmesan. Transfer to oven and cook until this top is beautiful and brown, about 10-15 minutes.
