Method

Smoked chicken will remain for several days if tightly wrapped and refrigerated.

1 / 4 cup soy sauce

2 tablespoons brown sugar

Remove wing tips and cut at the joints.
Method
Mix all ingredients and mix well, add the chicken. Cover and refrigerate at least 6 hours or overnight, turning occasionally. Preheat oven to 375F.
Place chicken on a rack in a foil lined baking pan. Bake 40

Mix all ingredients marinade in a blender until smooth. Marinate chicken in refrigerator overnight. Grill over coals until done, brushing frequently with coconut milk. Garnish with cilantro sprigs, accompanied by steamed rice and containers of salsa.
Sauce: Pound First 4 ingredients into a paste with mortar and then dissolved in vinegar. You can also put everything in a blender and mix until consistency smooth. Float shallots and cilantro on top.
